A Conversation with Bill McBrayer

This conversation was recorded on November 25, 2025.

When people talk about bourbon, they usually jump straight to tasting notes, bottle prices, or hype releases. What gets lost is the part that actually matters — how a distillery comes to life in the first place.

That’s why we sat down with Bill McBrayer, founder of McBrayer Distillery, to talk about the real story behind building a distillery from the ground up.

No marketing polish. No sales pitch. Just history, decisions, and lessons learned along the way.

Where McBrayer Distillery Started

Like most good bourbon stories, McBrayer Distillery didn’t begin with a massive facility or investor money. It started with an idea, patience, and a clear vision of what Bill wanted to create — a distillery rooted in craft, intention, and respect for the process.

Bill talked openly about the early days:
• The long planning phase most people never see
• The regulatory and logistical hurdles that come with starting a distillery
• Why rushing production was never an option

This wasn’t about chasing trends. It was about building something that would last.

Choosing the Right Path (Not the Fast One)

One of the most interesting parts of Bill’s story is how deliberate every decision was.

From equipment choices to production scale, McBrayer Distillery was designed with the long game in mind. Bill explained that there’s constant pressure in the bourbon world to:
• Produce faster
• Scale sooner
• Release earlier

But cutting corners early usually shows up later — in the glass.

That mindset shaped the foundation of the distillery and still influences how it operates today.

“If you rush things early, it always shows up later. usually in the glass.”
— Bill McBrayer

Respecting Tradition Without Being Stuck in It

McBrayer Distillery sits in a space that many distillers struggle to balance:
honoring tradition without blindly copying it.

Bill spoke about learning from established bourbon practices while still being willing to adapt when something didn’t make sense for his operation. The goal was never to reinvent bourbon — it was to make it honestly and thoughtfully.

That philosophy shows up not just in the spirits, but in how the distillery presents itself to the public.

Building a Distillery Is Building a Community

One theme that came up repeatedly was community.

A distillery doesn’t exist in isolation:
• It relies on people
• It serves people
• It becomes part of a local identity

Bill talked about the importance of education, transparency, and welcoming people who are still learning. Not every visitor walks in knowing mash bills or aging science — and that’s okay.

Good bourbon culture grows when people feel comfortable asking questions and being curious.

Why Stories Like This Matter

It’s easy to judge a bottle by its label or price tag. It’s harder — and more meaningful — to understand the work and decisions behind it.

That’s why we wanted this conversation to focus on history, not hype.

Conversations like this are exactly what we value inside the Bourbonado community: real stories, real people, and real bourbon — without gatekeeping.
